Herb Scent in Shopping Malls

It was reported in the Sunday Times on 3 March 2013 that shopping malls in Singapore smell of different scent.  Shopping mall concocts their own unique scent so as to allow shoppers to associate different scent with different shopping malls.

For instance, Ion Orchard, one of the shopping malls along Orchard Road, used the scent of natural herbs, fruits and flowers.  The spending on these scent in shopping malls ranges from a few hundred dollars to $10,000 a month.

The scent used should be mild and not too overpowering, otherwise it would certainly scare away potential shoppers. If the shopping mall could concoct scent using herbs and spices that could trigger shoppers to buy more, that would make the bosses of the retail outlets in the shopping mall very happy indeed.

Alternatively, in order to reduce spending on scent creation, why not put pandan plants in and around the shopping mall?  Pandan leaves release fragrant smell as well.  I have visited a farm which plants pandan at its entrance and the smell of the pandan leaves were so lovely that it lured me to walk inside the farm to explore it further while enjoying the fragrant scent at the same time.

Chillies

Chilli is often described as 'addictive'.  The burning sensation that we get from chillies stimulates the release of endorphins, which are natural painkillers that also create a feeling of well-being.  However, over time, the tolerance to capsaicin (a chemical found in chillies) increases and we need more or hotter chillies to produce the same sensation.  That is the reason why one of my friend who likes to eat chilli padi like nobody's business.  She can eat till her tongue feels numb and she can still continue to eat.

How do we measure the spiciness of chillies?  The scoville scale is a measurement of chillies.  The number of scoville units indicates the amount of capsaicin present.  It can range from zero (bell peppers) to more than a million (Naga Viper pepper).

On the other hand, if you are new to chillies, you can try the big green chillies that are pre-soaked in white vinegar, follow by the big red ones before graduating to chilli padi.   If you are burned by chillies and your mouth is on fire, try to drink some milk or eat some yoghurt.  Drinking water will not work because capsaicin is not water-soluble.  Water will quench a chilli burn only temporarily.  Water will wash the chemical around the mouth, making the burn even worse.

Difference Between Herbs and Spices

Generally, we refer herbs as the fresh green leafy part of the plant whereas spices as the dried form.  Spices can be the buds (cloves), roots (ginger), bark (cinnamon), berries (peppercorns), aromatic seeds (cumin) or the stigma of a flower (saffron).

For instance, we refer to the leaves of the coriander as the herb while the dried seeds as the spice.

Not all spices are hot.  Sometimes, we hear of people who say that they don't like spicy food.  Yet, what they are actually referring to is that they do not like food that is too hot.  Have you heard of people complaining of spicy vanilla ice cream or cinnamon buns?  Not that I know of.

On other hand, the spices in spice came from pepper, chilies and ginger etc.  I am one who cannot live without chilies in my meal.  I love cut red chilli or chilli padi (smaller size red chilli that is thousand times spicer than the red chilli). My favourite prawn noodle soup would not been nice if they did not add peppercorns to the soup base.

The taking in of spices is an acquired taste.  However, once we are used to spices, it actually becomes an addiction.  We could not live without spices in our diet.  The taste of our favourite dishes would be so very different if herbs and spices are not added in.
